The principle,physicochemical characteristics and judging method of quality change of soybean during the period of storage were described.The quality change of soybean could be effectively delayed to ensure the safety storage by decreasing the respiration rate and inhibiting the activities of microorganisms and insects with the method of low-temperature,low-oxygen,dry,ventilation,sealing and so on.
