我国是肉制品生产和消费大国,但发酵肉制品工业除了几种传统产品之外,新技术新产品的研发还处于起步阶段。微生物作为一种常用的发酵手段已经广泛应用于酸奶、主食、酒类、豆酱等产品的生产中。本文从微生物发酵剂及酶制剂等方面介绍了微生物在肉类加工中的应用与前景。

Our country products and consumes a vast amount of meat,while except several traditional fermented meat products,development of products with new technology is still in beginning stage.Microbe has been wildly used in food processing such as making yogurt,wine,bean paste and staple food.This article introduced the application prospect of microbial rising agent and its enzymatic preparation in meat processing.
