通过检测、观察和试验,证明窖泥在浓香型白酒发酵过程中,发挥着两个重要的作用：1,作为微生物的栖息容器,向入池粮醅中提供发酵产香微生物,发酵生成浓香型白酒中的香味物质;2,发挥＂以窖养糟＂的作用,向酒醅中渗透其经过长期发酵吸附的挥发性微量香味成分,使酒味更加丰满和谐。
통과검측、관찰화시험,증명교니재농향형백주발효과정중,발휘착량개중요적작용：1,작위미생물적서식용기,향입지량배중제공발효산향미생물,발효생성농향형백주중적향미물질;2,발휘＂이교양조＂적작용,향주배중삼투기경과장기발효흡부적휘발성미량향미성분,사주미경가봉만화해。
