研究首次将TA.XT plus物性测试仪引入到传统白酒生产中,通过大量试验并对试验结果使用质构曲线解析法进行分析获得酒糟测定参数为:硬度、粘性、弹性、内聚性、回复性,并使用这些参数对上、中、下、底层入窖糟进行了初步测定。

The TA.XT plus Texture Analyser was introduced into the production of traditional liquor, the measured parameters were hardness, adhesiveness, springiness, cohesiveness and resilience, which were determined by Texture Profile Analysis analyzing the large number of test results. The Physical properties of the different levels distiller's grains were measured using the measured parameters.
