本研究从巨大曲霉AF-11发酵上清液中提取抗真菌蛋白(AFP),并在实验室和生产制麦条件下分析AFP在制麦过程中的应用及影响。试验结果显示,AFP可有效抑制大麦表面霉菌的生长,控制真菌毒素残留,降低啤酒喷涌概率,并且对麦芽、麦汁质量无负面影响。
本研究從巨大麯黴AF-11髮酵上清液中提取抗真菌蛋白(AFP),併在實驗室和生產製麥條件下分析AFP在製麥過程中的應用及影響。試驗結果顯示,AFP可有效抑製大麥錶麵黴菌的生長,控製真菌毒素殘留,降低啤酒噴湧概率,併且對麥芽、麥汁質量無負麵影響。
본연구종거대곡매AF-11발효상청액중제취항진균단백(AFP),병재실험실화생산제맥조건하분석AFP재제맥과정중적응용급영향。시험결과현시,AFP가유효억제대맥표면매균적생장,공제진균독소잔류,강저비주분용개솔,병차대맥아、맥즙질량무부면영향。
In this study, the antifungal protein (AFP) was isolated from the the fermentation of AFP in malting were analysed under conditions of Laboratory and malting. Results showed that AFP can effectively and sigificantly inhibit the growth of mold on barley, and reduce both the residues of mycotoxin, and corresponding gushing potential, however, the data also show that its application has no negative effect on the quality of mah and wort.
