棘腹蛙%蛋白質%氨基痠%測定
극복와%단백질%안기산%측정
测定了棘腹蛙肌肉的蛋白质和16种氨基酸的含量,并与鳖、乌鳢、鲈鱼、鲫鱼、瘦猪肉、牛肉、牛乳和鸡蛋的相应成分作了比较,表明棘腹蛙的必需氨基酸含量高且平衡性好,鲜味氨基酸含量也较高,肉味鲜美。
測定瞭棘腹蛙肌肉的蛋白質和16種氨基痠的含量,併與鱉、烏鱧、鱸魚、鯽魚、瘦豬肉、牛肉、牛乳和鷄蛋的相應成分作瞭比較,錶明棘腹蛙的必需氨基痠含量高且平衡性好,鮮味氨基痠含量也較高,肉味鮮美。
측정료극복와기육적단백질화16충안기산적함량,병여별、오례、로어、즉어、수저육、우육、우유화계단적상응성분작료비교,표명극복와적필수안기산함량고차평형성호,선미안기산함량야교고,육미선미。
The protein and 16 amino acids content of muscle of Rana boulengeri were determined and compared with those of muscle of Pelodiscus sinensis, Ophiocepha argus, Stizostedion vitreum, Carassius auratus, thin pig, cattle and those of milk and egg. There are indications that the essential and delicious amino acids content of muscle of Rana boulengeri are high and good in equilibrum. The Rana boulengeri's meat is delicious.
