The red pigment was extracted from areca nut(Areca catechu) under various conditions to optimize extraction conditions. The extracting conditions are optimum when the red pigment is extracted at 50 ℃ for 90 min from the areca nut with the solvent of 50% ethanol containing 0.1 mol/L hydrochloric acid with the ratio of areca nut material to solvent being 1:30.
