以核桃、百合、牛奶为原料,采用对比试验和正交试验的方法,探讨核桃百合乳的工艺参数。试验结果表明:核桃仁在质量浓度为6%的NaOH溶液中常温处理15min,可获得最佳脱皮效果;核桃百合乳的最佳配方为20%的核桃浆与百合浆(比例为1.0︰1.0)、60%的牛奶、2%的蔗糖、0.08%的单甘脂;均质参数为65℃、20MPa,2次。

The walnut lily milk was developed from such materials as walnut, lily and milk. The technical parameters of the product were obtained through orthogonal tests and comparison experiments. The results show that the effect on removing the walnut peel of 6%NaoH solution treated 15 minute were best. The optimum prescription of walnut lily milk were as follows: the content of walnut and lily puree were 20% .The proportion of walnut and lily puree were 1∶1.The contents of milk, cane sugar and esters of stearic acid monoglyceride were: 60%,2%,0.08% respectively. The homogeneous parameters were 65 ℃, 20 MPa,2 times.
