蔬菜含有丰富的维生素、矿物质、碳水化合物、蛋白质等,是人们生活中必不可少的重要的植物性食品.随着社会经济的发展和生活水平的提高,蔬菜的品质得到研究者、生产者和消费者的重视.硝酸盐属于卫生品质的范畴,其与蔬菜营养品质指标之间关系密切.通过论述蔬菜硝酸盐与有机物(氨基酸、蛋白质、糖、有机酸、维生素等)和矿物质(P、K、Ca、Mg、Fe等)等营养品质之间的关系,以期为蔬菜生产者和消费者提供参考和借鉴.

Vegetable is the indispensable and important foodstuff in our daily life because of its abundant vitamin,minerals,carbohydrate,protein,and so on.With the development of our society and rising of living standard,there is an increasing concern about the nutritive and safety quality of vegetables for researchers,producers and consumers.Nitrate is sanitation quality of vegetables.This paper mainly reviewed the relationship between nitrate and organics(amino acid,protein,sugar,organic acid,vitamin),mineral elements(P、K、Ca、Mg、Fe) of vegetables in order to give directions and references for producers and consumers.
