用高压静电场处理α-淀粉酶,测试电场处理前后α-淀粉酶的X射线衍射谱,核磁共振谱.结果显示核磁共振谱没有变化,而X射线衍射谱发生明显变化,说明高压静电场不能改变α-淀粉酶的一级结构但可改变其高级结构.
用高壓靜電場處理α-澱粉酶,測試電場處理前後α-澱粉酶的X射線衍射譜,覈磁共振譜.結果顯示覈磁共振譜沒有變化,而X射線衍射譜髮生明顯變化,說明高壓靜電場不能改變α-澱粉酶的一級結構但可改變其高級結構.

In order to investigate the infuence of a high voltage electrostatic field (HVESF) on the conformation of α-Amylase,the H-NMR spectra and X-ray diffraction spectra of α-Amylase were measured before and after it be treated by HVESF.The H-NMR spectra did not change but the X-ray diffraction spectra changed obviously.Experimental results indicate that the conformation of α-Amylase can be changed by HVESF.
