对4种樱桃酒的抗氧化能力进行初步测定分析，使用的抗氧化指标为清除DPPH自由基能力及清除羟基自由基能力；使用福林酚法测定樱桃酒的总酚含量。结果表明，樱桃酒具有较强的抗氧化性，樱桃酒清除自由基能力与总酚的含量呈正比。
대4충앵도주적항양화능력진행초보측정분석，사용적항양화지표위청제DPPH자유기능력급청제간기자유기능력；사용복림분법측정앵도주적총분함량。결과표명，앵도주구유교강적항양화성，앵도주청제자유기능력여총분적함량정정비。
The antioxidation of four kinds of cherry fruit wine was measured. The measured antioxidation indexes included flee DPPH and OH radical scavenging capability. The total phenol content in cherry fruit wine was measured by Folin-Ciocaltcu method. The results indicated that cherry fruit wine had a strong antioxidation activity and total phenol content was positively related to free radicals scavenging effects of cherry fruit wine.
