[目的]优化超声波辅助浸提浒苔水溶性物质的工艺条件.[方法]采自青岛海区的新鲜浒苔作为试材,采用超声波辅助法浸提了浒苔水溶性活性物质,通过单因素试验研究了浸提时间、浸提温度、超声波功率对浸提得率的影响,并通过正交试验优化了提取工艺.[结果]3种因素均对浒苔水溶性物质浸提得率具有显著影响,其中超声波功率对浸提影响最大,其次是浸提温度和浸提时间.通过单因素试验研究以及正交试验优化的最佳工艺条件:超声波辅助浸提时间为4.5 h,浸提温度为75 ℃,超声波功率为200 W.该活性物质的浓缩采用旋转蒸发法,干燥采用冷冻真空干燥.[结论]浒苔水溶性活性物质为晶体状,颗粒均匀,可作为功能活性成分添加于各种食品之中.

[Objective] The research aimed to optimize the ultrasonic assisted extraction technology for water-soluble active material from E. prolifera. [Method] With fresh E. prolifera from the sea area of Qingdao as tested materials, the water-soluble activity material from E. prolifera was extracted by ultrasonic assisted extraction technology. The effects of extraction time, extraction temperature and ultrasonic power on the extraction yield were investigated through single factor experiments. The extraction technology was optimized by orthogonal test. [Result] All 3 kinds of factors had remarkable effect on the extraction yield of water-soluble active material from E. prolifera, among them, ultrasonic power had the greatest effect on the extracting yield, followed by the extraction temperature and extraction time. The optimum technology condition optimized by single factor experiments and orthogonal test was determined as follows: the ultrasonic assisted extraction time was 4.5 h, the extraction temperature was 75 ℃ and the ultrasonic power was 200 W. The activity material was concentrated by the method of rotation evaporation and dried by freezing vacuum drying. [Conclusion] The water-soluble active material from E. prolifera was crystal with uniform particles, which could be used as a functional activated composition to add into the various foods.
