对巴沙鱼皮制备明胶工艺过程中,硫酸质量分数、硫酸处理时间、明胶提取料液比、提取温度、提取时间等因素进行了系统研究,在此基础上通过正交试验确定最佳工艺为1%浓度的硫酸处理12 h,提取时间为4 h,料液比为1:6,提取温度为50℃.在此工艺条件下,明胶得率为75.15%,明胶粘度为3.66 mPa·s,凝胶强度为234 g.
對巴沙魚皮製備明膠工藝過程中,硫痠質量分數、硫痠處理時間、明膠提取料液比、提取溫度、提取時間等因素進行瞭繫統研究,在此基礎上通過正交試驗確定最佳工藝為1%濃度的硫痠處理12 h,提取時間為4 h,料液比為1:6,提取溫度為50℃.在此工藝條件下,明膠得率為75.15%,明膠粘度為3.66 mPa·s,凝膠彊度為234 g.

The influencing factors on the extraction of the gelatin from Basa fish skin, including the concentration and treatment time of H_2SO_4, the ratio between powder and water, the extraction time and temperature. Based on the single factor experiment and orthogonal experiment the authors established the optimum gelatin extraction conditions from Basa fish skin were the 1%H2SO4 pretreatment for 12 hours, the extraction time 4h and temperature 50 ℃. The ratio between powder and water was 1:6, the yield under this condition was 75. 15%, and 3. 66 mPa·s viscosity, 234 g gel strength.
