为建立一种快速、简便、准确、实用的测定食品中蔗糖含量的新型分析方法,利用超声波辅助加速反应,用旋光法测定甘蔗、市售白糖中的蔗糖含量.结果表明:甘蔗汁中蔗糖的含量为11.97 g/100 ml,RSD为0.61%(n=7);白砂糖中蔗糖的含量为84.53 g/100 g,RSD为0.85%(n=7).该方法直观,使用仪器简单,快速简便,工作效率得到极大提高.

In order to establish a kind of fast, simple, accurate and practical analysis method for determining the sucrose content in foods, sucrose content in sugarcane and commercial white sugar was determined by polarimetry using ultrasonic-assisted accelerated reaction. The results showed that sucrose content in sugarcane juice was 11.97 g/100 ml, with RSD of 0.61%(n=7). The sucrose content in white granulated sugar was 84.53 g/100 ml, with RSD of 0.85%(n=7). This method is visual, rapid, simple and efficient.
