[目的]分析青蛤和杂色蛤的化学组成和铁、锌、铜、铅、铬的含量.[方法]以连云港市售的青蛤和杂色蛤为试材,对其软体部分的一般化学组成及铁、铜、锌、铅、铬含量进行分析. [结果]青蛤和杂色蛤软体组织中蛋白质含量(以干基计)分别为44.06%和57.09%,脂肪含量(以干基计)分别为11.31%和13.52%,是高蛋白、低脂肪的水产品;重金属含量(以鲜重计),铁分别为200.63和120.74 mg/kg,锌分别为15.27和5.13 mg/kg,铜分别为2.14和1.93 mg/kg,铅分别为0.17和0.23 mg/kg,铬均未检出.[结论]青蛤和杂色蛤的蛋白质含量较高,脂肪含量较低,含有一定量的微量元素铁、锌和铜,且锌、铜、铅、铬的含量均低于我国无公害水产品安全要求(GB18406.4-2001)中的限量标准,可满足人体对微量元素的部分需要.

[결과]청합화잡색합연체조직중단백질함량(이간기계)분별위44.06%화57.09%,지방함량(이간기계)분별위11.31%화13.52%,시고단백、저지방적수산품;중금속함량(이선중계),철분별위200.63화120.74 mg/kg,자분별위15.27화5.13 mg/kg,동분별위2.14화1.93 mg/kg,연분별위0.17화0.23 mg/kg,락균미검출.[결론]청합화잡색합적단백질함량교고,지방함량교저,함유일정량적미량원소철、자화동,차자、동、연、락적함량균저우아국무공해수산품안전요구(GB18406.4-2001)중적한량표준,가만족인체대미량원소적부분수요.
[ Objective ] The study aimed to analyze the chemical composition and contents of Fe, Zn, Cu, Pb, Cr in Cyclina sinensis and Veneru-pis variegate. [ Method] With C. sinensis and V. variegate sold on the market of Lianyangang as the tested material,the general chemical composition and contents of Fe, Zn, Cu, Pb, Cr in their soft tissues were analyzed. [ Result ] In the soft tissues C. sinensis and V. variegate, the protein content (dry weight,dw) reached 44.05% and 57.09% resp. ,the fat content (dw) were 11.31% and 13.52% ,and their heavy metals (wet weight,ww) were 200.63 and 120.74 mg/kg for Fe resp. ,15.27 and 5. 13 mg/kg for Zn resp. ,2. 14 and 1.93 mg/kg for Cu resp. , 0.17 and 0.23 mg/kg for Pb resp. ,and were undetected for Cr resp. [Conclusion] C. sinensis and V. variegate had higher protein content and lower fat content and had microelements of Fe.Zn and Cu with some amount and the content of Zn,Cu,Pb and Cr were all lower than the limits of the metals in national free-pollutant seafood safety requirements (GB18406.4-2001) and could meet the microelements requirements of human body.
