采用靛酚蓝分光光度法对两种鱼的鱼肉和鱼鳞中的蛋白质含量进行了比较测定.结果表明该法稳定性、重复性好.该法最大吸收波长为648nm,摩尔吸光系数E648=1.209 L·mg-1·cm-1,标准曲线相关系数为r=0.9956.溶液经2 h后可完全显色,2 h后直至24 h吸光度无显著变化,平均回收率为98.9%.

The comparative determination of proteins in fish flesh and fish scale by Indophenol Blue Spectropho-tometry was studied. The result showed this method has good stability and repeatability. The maximum absorption wavelength of colored complex was found to be at 648 nm with apparent molar absorption coefficient E648 was 1.209 L·mg-1·cm-1.The coefficient of standard curve was r=0.9956. Coloration time was 2 hours and within 2~24hours it has stable coloration. The average recovery rate was 98.9%.
