This paper summarized the methods of the leaf protein extraction, which included water solution, heating methods ( heating up to 60℃ ,heating up to 90℃ ) ,acid - base method,protein precipitation,salting - out method,flocculating precipitation,ultrafiltration method,electro - concentration, phase transfer method of reverse micelles, organic solvent precipitation, fermentation acid method etc. In this paper ,compared the fermentation acid method and others extraction methods,told especially advantages that producted the leaf protein extraction by fermentation and pointed out good prospect of leaf protein concentrates in the aspect of the development and utilization.
