目的:研究五味子色素的提取工艺条件及色素稳定性.方法:在单因素实验基础上利用L_9(3~4)正交试验确定最佳提取工艺;以吸光度值的变化为指标,研究色素稳定性.结果:最佳提取工艺为:料液比1:25,乙醇浓度45%,浸提温度70℃,浸提时间40min;五味子色素光稳定性较好;在酸性、弱碱性条件下稳定,当pH≥12时出现颜色变化;对糖、氯化钠有一定稳定性;抗坏血酸和Na_2SO_3对色素影响较小;苯甲酸钠和H_2O_2对色素影响显著;金属离子Ca~(2+)、Mg~(2+)、Na~+对色素无明显影响,Fe~(2+)、Cu~(2+)、Al~(3+)对色素影响显著.

Objective: To study the optimal extractive process and stability of the pigment extracted from Shizandra chinesis . Method: On the basis of single factor tests, the L_9 (3~4) orthogonal test was used in the optimization of technological parameters. The stability of pigment was discussed by the changes in absorbance. Result: The optimum extraction yield can be obtained by 45% ethanol heated up at 70℃ for 40 minutes with the material-solvent ratio of 1: 25(g/mL) . The pigment holds good resistance to light. Also, the pigment is stable in acidic and alkalescency conditions, but discoloration emerges when pH is equal to or above 12. The pigment is relatively stable with carbohydrates and sodium chloride. Ascorbic acid and sodium sulfite have no adverse effects on the pigment but sodium benzoate and H_2O_2 do. Metallic ions Ca~(2+), Mg~(2+) and Na~+ have no effect on the pigment, but Fe~(2+), Cu~(2+) and Al~(3+) have remarkable effects on it.
