Lipoprotein lipase catalyses the hydrolysis of the triacycerol component of circulating chylomicrons and very low density lipoproteins, thereby providing non-esterified fatty acids and 2-monoacylglycerol for tissue utilization. It effected the metabolism of fat acid. It was the candidate gene of meat quality traits. The biological function, genetic structure of lipoprotein lipase, and the progress of association between the polymorphism and the quality of meat traits were reviewed.
