目的研究油菜蜂花粉中多糖和乙醇提取物对亚硝酸盐的清除作用.方法采用水提醇沉法对油菜蜂花粉中多糖进行提取,采用超声法制备乙醇提取物.并用紫外分光光度法测定多糖和乙醇提取物中黄酮的含量及其对亚硝酸盐的清除作用.结果测定油菜蜂花粉中黄酮含量为2.43%.多糖含量为10.79%.花粉乙醇提取物浓度为2.333mg/ml时对亚硝酸钠的清除率最大,清除率为25.37%.花粉多糖浓度为4.317mg/ml时对亚硝酸钠的清除作用最大,清除率为41.70%.结论坝上油菜蜂花粉乙醇提取物和多糖对亚硝酸盐有较高的清除作用.

Objective To study nitrite scavenging effect of bee pollen polysaccharide and Ethanol extract. Methods Polysaccharide was extracted by the method of water alcohol extraction(WAE),and the content and the clearance rate to Nitrite were determined by the UV-Spectrometer.The Ethanol extract was prepared by microwave extraction,and the content of flavonoids in it and the clearance rate to nitrite were determined by ultrasonic wave.Results The content of polysaccharide in bee pollen was 2.43%,the content of flavonoids in bee pollen 10.79%.The maximum scavenging rate of polysaccharide to nitrite was 41.7% with the content of 4.317 mg/ml,the maximum scavenging rate of Ethanol extract to nitrite was 25.37% with the content of 2.333 mg/ml.Conclusion The Ethanol extract and polysaccharide of Bashang Bee pollen have higher nitrite scavenging effect.
