以大豆浓缩磷脂为底物,探讨了贫水相中磷脂酶A1改性大豆浓缩磷脂的可行性.利用单因素实验确定了最佳反应条件,同时对产品的乳化性能进行了研究.实验获得的最佳反应条件为:反应温度50 ℃,加酶量500 μg/g,初始pH 6,反应时间12 h,底物大豆浓缩磷脂质量分数75%.在此条件下所得改性产品的HLB值为10.

The possibility of modification of soybean phospholipids in absent aqueous phase was studied,in which soybean phospholipids was used as a substrate.The optimum conditions of the reaction were investigated by single factor experiments as follows: reaction temperature 50 ℃,lipase dosage 500 μg/g,reaction time 12 h,initial pH 6,mass fraction of substrate 75%.Under the optimum conditions the HLB value of the finished product was 10.
