Silurus asotus%muscle%skin%male and female%nutrient components
对雌雄鲶鱼(Silurus asottts Linnaeus)肌肉和皮肤营养成分进行了比较分析,并对其营养品质进行了评价.结果显示:雌鲶鱼肌肉和皮肤中粗蛋白的质量分数(19.57%、27.56%)均显著高于雄性(16.85%、26.34%,P〈0.05),雌雄鲶鱼肌肉中水分的质量分数(79.77%、79.86%)显著高于皮肤(73.00%、73.50%,P〈0.05),但雌雄鲶鱼肌肉之间、皮肤之间水分的质量分数差异不显著(P〉0.05).雌雄鲶鱼肌肉和皮肤均含有18种氨基酸,雌鲶鱼肌肉中的氨基酸总量、必需氨基酸的质量分数、风味氨基酸的质量分数(18.4J4%、7.81%、5.87%)显著高于雄鲶鱼(13.02%、5.33%、4.21%,P〈0.05),雌鲶鱼皮肤的氨基酸总量、必需氨基酸的质量分数、风味氨基酸的质量分数(27.81%、5.49%、14.03%)显著高于雄鲶鱼(22.66%、4.75%、10.63%,P〈0.05).雌鲶鱼肌肉和皮肤的蛋白质氨基酸组成优于雄鲶鱼,表明雌鲶鱼较雄鲶鱼营养丰富.

Nutrient components in the muscle and skin of female and male Silurus asotus were investigated. The results showed that the contents of crude protein in fresh muscle and skin of female Silurus asotus (19. 57 % ,27.56 % ) were significantly higher than those of the male Silurus asotus (16. 85 % , 26. 34 % ,P 〈 0. 05) ; the contents of moisture in the muscle of male and female Silurus asotus (79. 77 %, 79.86 % ) were significantly higher than those of the skin (73.00 % ,73.50 % ,P 〈 0. 05) , but there was no significant difference between female and male (P 〉 0. 05) . There were 18 types of amino acids in both female and male Silurus asotus muscle and skin. The contents of total amino acids, essential amino acids and flavour amino acids in the muscle of female Silurus asotus ( 18.44 % ,7.81%, 5.87 % ) were significantly higher than those of the male Silurus asotus ( 13.02 % ,5.33 % ,4. 21% ,P 〈 0. 05) , respectively; The contents of total amino acids, essential amino acids and flavour amino acids in the skin of female Silurus aso- tus (27. 81% ,5.49 % ,14. 03 % ) were significantly higher than those of the male Silurus asotus (22. 66 %, 4. 75 % ,10. 63 % ,P 〈 0. 05) , respectively. The amino acid compositions of the protein in fresh muscle and skin of female Silurus asotus were better than those of male Silurus asotus. In conclusion, the female Silurus asotus had more nutriology advantages than the male Silurus asotus.
