以山路菜、苹果为原料,研究山路菜、苹果复合膳食纤维保健饮料的加工工艺,并对山路菜的护绿、除单宁进行研究.通过正交试验、感官评价,得出复合膳食纤维饮料的最佳配比为苹果膳食纤维汁40g/100mL、山路菜膳食纤维汁30g/100mL、白砂糖10g/100mL、柠檬酸0.25g/100mL、蜂蜜2.8g/100mL、复合稳定剂为羧甲基纤维素钠0.1g/100mL、单干酯0.13g/100mL、明胶0.2g/100mL.研制出营养丰富、风味独特的山路菜、苹果复合膳食纤维保健饮料.

Gray dietary fiber beberage 30 g/100 mL,sugar 10 g/100 mL,citric acid 0.25 g/100 mL,honey 2.8 g/100 mL;cmplex stabilizer CMC 0.1g/100 mL,glycerin monostearte (GMS) 0.13 g/100 mL,gelatin 0.2 g/100 mL.The produced beverage using optimized process exhibited abundant nutrition and unique flavor.
