Constituted by 11 conjugated and 2 unconjugated double bonds, lycopene is a highly unsaturated open straight chain hydrocarbon. Lycopene that has many important physiologic functions, such as prevent cancer, cardio-vascular diseases, osteoporosis, and strengthen immunity. The production method of lycopene includes plant extrac-tion, chemical synthesis and microbial fermentation. Plant extraction does not satisfy the market need because of the low content in the plants. Chemical synthesis comes with many disadvantages like the low yield, instability of product quality and high cost. This paper briefly reviewed the development of key fermentation technologies, such as the breeding of producing strain, fermentation processes optimization, separation and purification in down-stream process.
