目的 了解深圳市宝安区大浪街道餐饮单位餐(饮)具消毒工作中存在的问题,为卫生行政部门制定管理措施提供科学依据.方法 对2008、2009两年餐饮单位餐(饮)具消毒检测结果进行分析.结果 2008、2009年的合格率分别为53.98%、75.81%,两年检测样品合格率差异有统计学意义(χ~2=238.10,P<0.01);大型餐饮业合格率最高88.68%,小型餐饮业合格率最低36.87%,不同类型餐饮业合格率差异有统计学意义(χ~2=872.01,P<0.01);不同种类餐饮具,其检测合格率差异也有统计学意义(χ~2=3707.35,P<0.01).结论 大浪街道餐饮业消毒的卫生质量有待提高.应加强对餐饮业监督力度,尤其是对消毒效果不好的小型餐饮业,应增加监督和抽检的频次.

Objective To study the disinfection status of tableware in Dalang Subdistfict, provide basis for making health management policy. Methods Analysis of Surveillance on disinfection of dinner and drinking from 2008 to 2009; Results The qualified rate in 2008 was 53.98%, in 2009 was 75.81%
,there were significant difference in qualified rate between two years (X~2=238-10, P< 0.01). The qualified rate of large catering enterprises was the highest (88.68%), that of small catering enterprises was the lowest (36.87%). The difference in qualified rate among different types of catering enterpriseswas significant (X~2=872.01, P<0.01), and the difference in qualified rate among different types of dinner anddrinking setwas significant too (X~2 = 3707.35, P< 0.01). Conclusion The quality of dinner and drinking set disinfection of catering trade in DalangSubdistrict should be improved. The suggestion is that the institution of health inspection should strengthen the health supervision of catering trade, increase the frequency of supervision and sampling inspection in small catering enterp rises which with poor disinfection efficacy or absence of management.
