[目的]研究安徽石台大山村天然富硒绿茶功能成分及其最优提取工艺.[方法]以普通绿茶为对照,测定石台大山村天然富硒绿茶中硒、茶多酚、维生素C、蛋白质的含量.利用L_9(3~4)正交试验设计对其功能成分的提取工艺进行优化.[结果]石台大山村天然富硒绿茶中硒、茶多酚、维生素C、蛋白质的含量均显著高于普通绿茶.功能成分的最佳提取工艺:料液比1∶ 30,浸提时间1.5 h,浸提温度100 ℃,超声波功率250 W.最优工艺条件下功能成分得率为49.79%.[结论]该研究为天然富硒绿茶的研究和利用开发提供了一定的理论依据.

[Objective] The function component of the selenium-enriched green tea in the mountain village of Shitai County of Anhui Province and the technical optimization of its extract were studied.[Method] The ordinary green tea being taken as CK,the content of selenium,tea polyphenols,vitamin C and protein in the selenium-enriched green tea was determined.The extraction process of the tea was optimized with orthogonal experimental design[L9(34)].[Result] The content of selenium,tea polyphenols,vitamin C and protein in the selenium-enriched green tea was higher than these in ordinary green tea.The optimal extraction process time,1.5 hours; the extraction temperature,100 ℃ and the ultrasonic power,250 W,under which condition,the yield of functional component extracted was 49.79%.[Conclusion] The certain theoretical basis of the study and development of selenium-enriched green tea was provided.
