首先对红曲霉JR产红曲色素的液态发酵培养基配方的筛选进行研究,结果表明葡萄糖、蛋白胨、硫酸镁、硫酸锌和硫酸锰最利于红曲色素的合成.在此基础上,应用二次正交旋转组合实验设计方法对发酵培养基选用的葡萄糖、蛋白胨、硫酸镁、硫酸锌和硫酸锰等组分作进一步研究,结果显示,红曲霉JR产红曲色素的较佳发酵培养基配方(g/L)为:葡萄糖33.18,蛋白胨13.36,MgSO_4 0.66,MnSO_4 0.1,ZnSO_4 0.1.该发酵培养基配方下红曲色素色阶达到203.4 U/mL,比二次正交旋转组合实验设计中的初始发酵培养基配方(葡萄糖50 g/L,蛋白胨10 g/L,MgSO_4 1.0 g/L,MnSO_4 0.1 g/L,ZnSO_4 0.1 g/L)下的红曲色素色阶(145.6 U/mL)提高将近39.70%.

The liquid-state fermentation media for Monascus pigrn6nt production by Monascus purpureus JR were optimized,and the results showed that glucose,peptone,magnesium sulfate,zinc sulfate and manganese sulfate were the favorable medium components for the biosynthesis of Monascus pigment.Based on this fact,the effects of the above components on the biosynthesis of Monascus pigment were further researched with the method of rotational quadratic orthogonal experiment design.As a result,the preferable fermentation medium for Monascus purpureus JR fermentation was as follows(g/L):glucose 33.18,peptone 13.36,MgSO_4 0.66,MnSO_4 0.1,ZnSO_4 0.1.The final Monascus pigment content under this fermentation medium reached 203.4U/mL.which was 39.70%higher than that obtained with the original medium recipe(glucose 50 g/L,peptone 10 g/L,MgSO_4 1.0 s/L,MnSO_4 0.1 s/L,ZnSO_4 0.1 g/L).
