对溶剂法提取番茄中番茄红素的稳定性进行了研究.首先确定了番茄红素的最大吸收波长,然后分别从光、温度、氧气、pH值、金属离子5方面讨论了其对番茄红素稳定性的影响,并根据单因素实验设计L(2)正交实验表,进行正交实验,得出番茄红素的适宜储藏条件是避光、隔氧、pH值为中性,室温、无金属离子存在、无静置.

The stability of lycopene extracted from tomato with solvent was studied,firstly the maximum absorption wavelength of lycopene was determined,and then five factors including light,temperature,oxygen,pH,metal ions were used to test the stability of lycopene,L(2) orthogonal experimental table was designed according to single factor experiment,and with the orthogonal experiments,obtained the suitable storage conditions of lycopene which were no light,no oxygen,pH neutral,room temperature,no metal ions,and no stewing.
