以沙棘果实为原料提取色素,经正交试验选取最佳提取条件,并对脂溶性色素进行了部分理化性质的研究。结果表明,沙棘黄色素主要系脂溶性类胡萝卜素。其最佳提取剂为丙酮。最佳提取条件为:样品研磨5 min,丙酮与样品的配比为2:1,多次洗涤,提取温度:40℃,提取时间90 min。PH值、温度、室内自然光、BHT、Vc等对沙棘色素稳定性影响较小,直射阳光、Fe3+,Fe2+,I-等对色素具有较强的破坏作用。

This study presented a method utilizing sea buckthorn fruits as raw material to extract yellow colorants. Optimum extraction agent and conditions were studied by the orthogonal experiment. The stability of the colorants to light, temperature, pH, oxidant, reductant,metal ions etc. were also systematically studied.The results indicate that sea buckthorn colorants mainly are made of oil- soluble carotenoid. Optimum exaction agent is acetone, while optimum extraction conditions are that the sample is grinded for 5 min, solvent volume to sample weight ratio is 2 : 1, extraction temperature is 40℃ and extraction time is 90 min. The influence of pH, temperature, room nature light, BHT, Vc etc on the stability of the colorants is small relatively, but the destruction of sunlight, Fe3+, Fe2+, I-etc to the colorants is serious.
