采用异烟酸-吡唑啉酮比色法,对常见竹笋中氰化物含量进行了测定.结果表明,苦竹笋中氰化物含量与笋生长时期及生长区域有较大关系.未出土的苦竹笋氰化物含量为0.72~3.02/μg/g,而出土笋则为0.17μg/g.未出土及出土毛竹笋氰化物含量分别为1.40g/gμ和1.21μg/g,差别不显著.雷竹笋中氰化物含量为1.65μg/g.水煮笋中氰化物含量处于较低水平.
採用異煙痠-吡唑啉酮比色法,對常見竹筍中氰化物含量進行瞭測定.結果錶明,苦竹筍中氰化物含量與筍生長時期及生長區域有較大關繫.未齣土的苦竹筍氰化物含量為0.72~3.02/μg/g,而齣土筍則為0.17μg/g.未齣土及齣土毛竹筍氰化物含量分彆為1.40g/gμ和1.21μg/g,差彆不顯著.雷竹筍中氰化物含量為1.65μg/g.水煮筍中氰化物含量處于較低水平.

The cyanide contents in bamboo shoots were determined by isonicotine acid-pyrazolone photometric method.The cyanide contents in pleioblastus amarus bamboo shoots are closely related with their growing periods and growing regions.The contents are 0.72~3.02 μg/g when bamboo shoots are under the ground and 0.17 μg/g when out of the ground.The cyanide contents in moso-bamboo shoots under the ground and out of the ground are 1.40μg/g and 1.21/μg/g,respectively and with no significant difference.The cyanide contents in phyllostachys praccox bamboo shoots are 1.65μg/g.The cyanide contents in boiled bamboo shoots are low.
