针对目前金华酥饼烤制无法实现自动化,并且成品的酥、香、脆程度不能接近传统炭炉烤制水平的问题,首先介绍了金华酥饼烤炉智能控制系统的组成及其实现方法;然后采用温度传感器、自动点火系统、单片机控制技术以及金华酥饼烤制工艺数据库.解决了传统风味食品的洁净化生产问题.研究结果表明,该研究为进一步优化酥饼烤炉奠定了基础.

Aiming at the problem that operating and roasting of jinhua crisp cake could not reach automation, and the crisp, fra-grant, fragile degree of the finished product could not attain the level that the traditional charcoal stove roasts, the system of an intelligent controlled oven was intrduced first. Adopting the temperature sensor, autoignition system, microcontroller technology and the craft database of roasting Jinhua crisp cake, the cleaning problem of the traditional properties food produces was solved.The research results indicate that it lay the foundations of optimizing the crisp cakes oven.
