阐述了近年来食品科学专业的本科生在实践能力和科研能力培养方面所面临的困难和问题；分析了现行教学大纲中“双能力”培养的缺失，以及弥补这些缺失所采取的措施；提出了利用“双轨制”的组织管理模式和运行机制，以及如何利用激励机制来提高学生“双能力”的方法。
