从产业升级的相关理论入手，运用国外和国内学者对此的研究成果和他们成功的研究方法及研究经验，结合餐饮产业的特点，运用偏离份额分析法（变化率r和产业结构转移份额P）对餐饮产业内部结构进行分析，并就中国和云南的餐饮产业内部结构的截面数据和时间序列数据进行二维比较，提出餐饮产业内部结构的合理化趋势，以及政策推动云南餐饮产业升级的三个方面建议。

Relevant theories of industries upgrading, research results of scholars home and abroad and their successful research methods and experience, characteristics of catering industries and shift - share - analysis method （SSA） are applied to the analysis of the internal structure of catering industries. Two - dimension comparison of section data and time series data of the internal structure of catering industries in China and Yunnan Province leads to reasonable trend of the internal structure of catering industries and puts forward three suggestions in respect of catering industries upgrading propelled by policies in Yunnan Province.
