A method to determinate the concentration of VC and polyphenols without separation was studied. In 38% and 47.5% (v/v) ethanol, 6×10~(-5) mol/L Br_2, 2.5×10~(-3) mol/L KI aqueous solutions, the apparent molar absorptivities (L·mol~(-1)·cm~(-1)) of vitamin C and polyphenol are 5.42×10~4, 8.22×10~5 and 5.46×10~4, 8.60×10~5, and the relative standard deviations are 2.5%, 2.3% and 2.1%, 2.6%. This method has been successfully used to determine the contents of VC and polyphenol in mungbea sprouts, limes, unripe apples, green capsicums, and the recoveries were found to be 95.78%~100.7%, the results are satisfactory.
