黄酒污染微生物的研究有利于制订针对性的控制措施。目前从成品黄酒检测出的污染微生物有乳酸杆菌、乳链球菌、戊糖片球菌、醋酸菌、短芽孢杆菌、类芽胞杆菌、霉菌、酵母等,其中大多数微生物会引起酒的酸败、浑浊、产生醭膜或白花。

Researches in contaminative microbes of Chinese rice wine would be beneficial to develop the targeted controlling methods.At present, Lactobacillus spp., Streptococcus lactis, Pediococcus pentosaceus, Acetobacter spp., Bacillus brevies, Paenibacillus, molds, yeasts, etc. were isolated in contaminated Chinese rice wine samples, and most of them were spoilage microbes for Chinese rice wine.
