This paper developed the processing technology of sweet potato macaroni,studied the structural characteristic of its processing machine and its forming principle.In addtion,performance function was tested,the result shows:sweet potato macaroni has special flavor,processing technology is reliable and the function of machine is stable.Not only all these expand the range of food made from sweet potato,but also it is very important for the people in mountain area to improve their economical benefit and exploit source of sweet potato.
