采用湖北白猪优质系,选取自杂交一代开始到第三世代各阶段共379头猪只的生长肥育资料和75头猪只的屠宰测定资料,进行了生长肥育和胴体性能的初步分析.结果表明,湖北白猪优质系90kg左右体重的屠宰率可达75%,瘦肉率可达59%,肌内脂肪含量也在3%以上,说明选育群生长肥育性能还需要进一步提高.分析表明,湖北白猪优质系的结束体重与结束日龄、全期日增重、背膘厚和前期日增重有较大程度的相关,相关系数分别为0.59、0.53、0.35和0.31;屠宰体重与屠宰率和眼肌面积相关程度较高,相关系数分别为0.39和0.33.与瘦肉率、脂率、板油率和肌内脂肪的相关系数分别为0.19、0.22、0.18和0.21:瘦肉率与脂率、板油率、胴体膘厚和肌内脂肪有较高的负相关,相关系数分别为-0.80、-0.66、-0.47和-0.35,与眼肌面积有较高的正相关,相关系数为0.58,这提示选育工作要注意兼顾瘦肉率和肌内脂肪的选择.结果还表明,湖北白猪优质系的最适上市体重为90 kg.

In this study, the data of 379 pigs growth and 75 carcass performance during the breeding process of the Hubei white high grade line were used to analyze the growth and carcass performance. The results showed that the growth performance of the breeding population needed further breeding and stepping up. The dressing percentage and the lean meat percentage of the 90 kg pigs were 75% and 59% respectively. And the intra-muscle fat content was above 3%. The final weight had great correlation with the final age, the average daily gained during whole feeding period, the back fat and the early average daily gained. The correlation coefficients were 0.59, 0.53, 0.35 and 0.31 respectively. The slaughter weights had great correlations with dressing percentage and eye-muscle area, and the correlation coefficients were 0.39 and 0.33 respectively. The correlation coefficients of the dressing percentage between lean meat percentage, fat percentage, leaf fat per-centage and the intra-muscle fat content were 0.19, 0.22, 0.18 and 0.21 respectively. The lean meat percentage of theHubei white swine had great negative correlations with the fat percentage, the leaf fat percentage, the carcass back fat and the intra-muscle fat content, and the correlation coefficients were -0.80, -0.66, -0.47 and -0.35 respectively. It indicated that the lean meat percentage and the intra-muscle fat content should be put into consideration simultaneously. The most suitable market weight of the Hubei whiteswine was 90 kg.
