目的:了解常熟市城乡居民膳食结构及营养素摄入情况,为改善居民膳食现状、制定符合本地实际的营养干预政策提供依据。方法:采用3日称重、24h膳食回顾和食物频率调查问卷相结合的膳食调查方法,由专业调查员入户进行食品称重、问卷询问和记录。结果:常熟市调查人群的膳食结构不尽合理,存在着水果、奶类等摄入偏低,植物油和食盐等摄入过量,总能量、膳食纤维、维生素A、硫胺素、核黄素、钙、钾、镁、锌、硒等营养素摄入量不足,钠、铁超过参考摄入量等问题。结论:必须采取综合措施,加强膳食指南的健康教育和营养干预,从而提高营养与健康水平,预防和控制营养相关疾病。

목적:료해상숙시성향거민선식결구급영양소섭입정황,위개선거민선식현상、제정부합본지실제적영양간예정책제공의거。방법:채용3일칭중、24h선식회고화식물빈솔조사문권상결합적선식조사방법,유전업조사원입호진행식품칭중、문권순문화기록。결과:상숙시조사인군적선식결구불진합리,존재착수과、내류등섭입편저,식물유화식염등섭입과량,총능량、선식섬유、유생소A、류알소、핵황소、개、갑、미、자、서등영양소섭입량불족,납、철초과삼고섭입량등문제。결론:필수채취종합조시,가강선식지남적건강교육화영양간예,종이제고영양여건강수평,예방화공제영양상관질병。
【Objective】To understand the dietary pattern and nutritional status among the rural residents in Changshu City.【Method】A combined diet survey was used,including foods weighing in 3 days,24h diet recall and food intake frequency questionnaire.Indoor weighing and interviewing were operated by professionals.【Result】The results showed that some nutrients intakes were deficiency and unbalanced in sample population,such as total energy,dietary fiber,vitamin A,thiamine,riboflavin,calcium,potassium,magnesium,zinc and selenium,less intake of fruit and dairy and excessive intake of sodium and iron.【Conclusion】It was necessary to strengthen nutrition education to reduce the incidence of nutrition related disease.
