通过添加抗氧化剂BHA、BHT、PG、TBHQ以及增效剂柠檬酸来探讨其抗氧化性能提高之效果,结果是:使用0.01%TBHQ+0.01%BHr+0.01%柠檬酸作为瓜蒌子油的抗氧化剂,可使瓜蒌子油在60 ℃下的贮藏时间由8 d延长到26 d,在20℃下的预期贮藏时间从4个月延长至14个月,抗氧化效果比较显著.
通過添加抗氧化劑BHA、BHT、PG、TBHQ以及增效劑檸檬痠來探討其抗氧化性能提高之效果,結果是:使用0.01%TBHQ+0.01%BHr+0.01%檸檬痠作為瓜蔞子油的抗氧化劑,可使瓜蔞子油在60 ℃下的貯藏時間由8 d延長到26 d,在20℃下的預期貯藏時間從4箇月延長至14箇月,抗氧化效果比較顯著.

Gualouzi oil is sensitive to oxidation because of its abundant polyunsaturated fatty acid content. The aim of this work is to discuss the improving effect of adding BHA, BHT, PG, TBHQ, and citric acid on the antioxidation perfor-mance of gualouzi oil. Result: When 0.01% TBHQ + 0.01% BHT + 0.01% citric acid is added, the shelf life of gualouzi oil extends from 8 d to 26 d at 60 ℃, and from 4 months to 14 months at 20 ℃, displaying a marked improving effect on antioxidation performance.
