烟叶中的生物酶在烟叶的生长及发酵过程中起着重要作用.他们能够促进烟叶内部有机物质的分解与转化,调整烟叶中各种化学成分的比例,提高烟叶中香气成分的形成和积累,从而提高烟叶的综合品质.综述了烟叶生长、加工过程中淀粉酶、蛋白酶、多酚氧化酶的活性变化规律,以及外加生物酶在烟叶发酵中的应用现状.
煙葉中的生物酶在煙葉的生長及髮酵過程中起著重要作用.他們能夠促進煙葉內部有機物質的分解與轉化,調整煙葉中各種化學成分的比例,提高煙葉中香氣成分的形成和積纍,從而提高煙葉的綜閤品質.綜述瞭煙葉生長、加工過程中澱粉酶、蛋白酶、多酚氧化酶的活性變化規律,以及外加生物酶在煙葉髮酵中的應用現狀.

Enzymes in tobacco played an important role in tobacoo growth and post fermentation. They could promote the decomposition and transformation of the organic matters in tobacco leaves, adjust the ratio of a variety of chemical components and increase the formation and accumulation of the aroma components. As a result, the quality of tobacco leaves could be improved to a large extent. The change rules of amylase, protease and polyphenoloxidase activity in tobacoo growth and processing, and the application of external enzymes in the tobacco fermentation were summarized in this article.
