The bacteria are not isolated from each other,they were capable of perceiving the population quantity by certain signal molecular released,so that they could talk to and communicate with other organisms and their living environment,this phenomena termed quorum sensing (QS).A great deal of investigations proclaimed that bacterial food spoilage was caused by bacterial quorum sensing.The gram negative bacteria were the dominant microorganisms which were responsible for the spoilage of meat and meat produces.The quorum sensing mechanism of the gram negative bacteria and the characteristics of the signal molecular were reviewed herein.The emphasis was focused on the research progress of the relationship between the bacterial quorum sensing and the spoilage of meat and meat produces.The purpose provided theoretical references for meat and meat produces preservation strategy target to manipulate quorum sensing.
