Honeybee pollen is a nutrient-rich perfect food, which have many nutritional and bioactive constituents, and they have the physiological and pharmacology functions of antioxidation, antibacterial, enhance immunity effects and so on. The functional factor and effect factor of antioxidant effect in honeybee pollen were reviewed in this essay. Meanwhile, the development prospect of honeybee pollen in functional food was pointed out.
