以赤霞珠葡萄果实为试材,在花后20~110d(每隔10d取样一次),测定和分析果实生长发育过程中糖分(葡萄糖、果糖、蔗糖)积累的动态变化,以及不同时期果实己糖激酶(HXK)、细胞壁酸性转化酶(CWINV)和蔗糖合酶(SuSy)活性变化趋势。结果表明,赤霞珠葡萄果实整个发育过程中主要以积累葡萄糖和果糖为主,蔗糖含量极微;HXK活性与葡萄糖、果糖呈相反的变化趋势;葡萄糖和果糖含量低时,CWINV和SuSy的活性开始上升;反之,CWINV和SuSy的活性降低。相关性分析表明,蔗糖含量与葡萄糖、果糖含量显著相关,葡萄糖和果糖含量与CWINV和SuSy活性负相关。

이적하주포도과실위시재,재화후20~110d(매격10d취양일차),측정화분석과실생장발육과정중당분(포도당、과당、자당)적루적동태변화,이급불동시기과실기당격매(HXK)、세포벽산성전화매(CWINV)화자당합매(SuSy)활성변화추세。결과표명,적하주포도과실정개발육과정중주요이적루포도당화과당위주,자당함량겁미;HXK활성여포도당、과당정상반적변화추세;포도당화과당함량저시,CWINV화SuSy적활성개시상승;반지,CWINV화SuSy적활성강저。상관성분석표명,자당함량여포도당、과당함량현저상관,포도당화과당함량여CWINV화SuSy활성부상관。
Berry samples of Cabernet Sauvignon grapevines were collected between 20 to 110 days after full blossom (once every 10 days). Dynamic changes of sugar (glucose, fructose and sucrose) accumulation and the activity of hexokinase(HXK), cell wall invertase(CWINV) and sucrose synthase enzymes (SuSy) during the different stages of berries were determined. The results showed that during the development of grape berry, glucose and fructose accumulation is high while sucrose is minimal. The activity of HXK showed an inverse relationship with the accumulation of glucose and fructose; CWINV and SuSy activity increased when glucose and fructose contents were low, otherwise, CWINV and SuSy activity decreased. Correlation analysis showed that sucrose content was significantly related to glucose and fructose content, glucose and fructose content was negatively correlated to CWINV and SuSy activity.
