Microorganism was the important factor in food safety during the manufacture,circulation and storage processing of meat and meat products.In the paper,the microbial diversity and the mechanism leading to corruption by specific spoilage organisms (SSO)were analyzed,and the method and research progress of predictive microbiology were summarized,and the implication was discussed.Through mathematical modeling,it can reasonably predict the shelf life of chilled meat.
