本文采用福林丹尼斯法测定成熟期西拉、品丽珠、美乐、赤霞珠和黑比诺5个酿酒葡萄品种种子单宁的含量和品质,并结合感官品评对浸提液浓度、浸提时间和温度等条件进行优化。结果表明:浸提液浓度为12%、温度28~29℃、8~10d时浸提效果较好。不同品种种子单宁含量和品质差别较大,其中黑比诺种子浸提出的单宁是西拉的两倍,按照提取单宁含量排序为:黑比诺〉美乐〉品丽珠〉赤霞珠〉西拉。

본문채용복림단니사법측정성숙기서랍、품려주、미악、적하주화흑비낙5개양주포도품충충자단저적함량화품질,병결합감관품평대침제액농도、침제시간화온도등조건진행우화。결과표명:침제액농도위12%、온도28~29℃、8~10d시침제효과교호。불동품충충자단저함량화품질차별교대,기중흑비낙충자침제출적단저시서랍적량배,안조제취단저함량배서위:흑비낙〉미악〉품려주〉적하주〉서랍。
Folin Denis method was used to detemine the contents and quality of tannins in seeds of Syrah, Cabernet Franc, Merlot, Cabernet Sauvignon and Pinot Noir ripe grapes. Sensory evaluation was also employed to determine the optimal extraction concentration, time, and temperature. Results showed that 12% extract concentration, temperature of 28- 29 ℃ and 8- 10 days' extract time gave the best results. Tannin content and quality in seeds from different varieties varied greatly. The content of tannin in Pinot Noir was twice that of Syrah. The extracted tannin content in these varieties were in the following order: Pinot Noir〉 Merlot〉 Cabernet Franc〉 Cabernet Sauvignon〉 Syrah.
