本文对食源性疾病快速检测技术的研究方法、研究现状进行了分析和概括;对目前分子检测技术中存在的问题和不足进行了分析和总结;提出了采用可视芯片检测技术用于肉类病原微生物的快速检测,不仅具有基因芯片检测技术的高通量、高灵敏度、高准确性、检测速度快等特点,而且检测结果可直接肉眼识别读取,用于现场检测.该技术研究应用将为提高肉类食品安全的检测质量和检测水平以及加大食品监管力度奠定了基础.

The study methodology and study statu of the fast detection techniques of foodborne illnesses were summarized,also the problems and weakness in the molecule detection technique were analysed in this paper.Application of the visual chip in the fast detection of meat pathogenic microorganism was proposed,which was characterised with high-flux,high sensitivity,high veracity and fast detection.Furthermore,visual chip were used,the detecion results could be recognised and read directly,which was suitable for on-site detection.Application of visuril chip would advance the detection level of meat products,enhance the supervision of food production and improve the status of meat food safety.
