During the storage of Baiyunbian raw liquor, the metal ions in the pottery jar dissolved into the liquor continuously, which caused their enrichment in the liquor. The relationship between the metal ions and the maturation of the liquor was discovered by comparison of the raw liquor stored in different pottery jars. According to the different effects of pottery jar storage on raw liquor maturation, the guidance of scientific storage of the raw liquor by proper pottery jaw arrangement was provided.
