[目的]比较不同时期玉米须多糖含量的差异及蛋白质的纯化.[方法]采用热回流法提取多糖及木瓜蛋白酶除去蛋白质.通过单因素和正交试验找到木瓜蛋白酶的最优条件.[结果]吉林和松原乳熟期多糖含量为9.87%、10.15%,成熟期为4.85%、4.55%,乳熟期平均产率花柱为7.90%,柱头为12.58%,成熟期平均产率花柱为4.91%,柱头为3.51%.酶水解正交试验最优条件:酶底比1.00%,pH值5.5,体系在水浴中水解1.5 h,温度为40 ℃.[结论]乳熟期多糖含量高于成熟期;乳熟期柱头含量最高,酶法可作为玉米须多糖的脱蛋白的工艺,除蛋白率60.31%,损失率为14.71%.

[Objective] In order to compare polysaccharides content from different seasons and positions of corn silk and purification of deproteinization. [Method] Polysaccharide and papain elimination protein were extracted by thermal reflux method. The most superior condition of papain was found through the single factor and the orthogonal experiment. [Result] The polysaccharides contents of Jilin and Songyuan in growing season were 9.87% and 10.15% respectively,ripe season were 4.85% and 4.55% respectively; during the growing season, average yield of style was 7.90%. stigma was 12.58%, during the ripe season, average yield of style was 4.91%, and stigma was 3.51%.The most superior condition of enzyme hydrolysis was the ratio of enzyme and substrate 1.00%, pH value was 5.5, system in water bath hydrolysis was 1.5 h, the temperature was 40 ℃. [Conclusion]The polysaccharides content of growing season was significantly higher than ripe season; Stigma content in growing season was highest, enzyme method was more suitable for remove protein , rate of deproteinization was 60.31% and the lose of polysaccharide was 14.71%.
