[目的]研究诸葛菜叶蛋白的提取工艺.[方法]以新鲜诸葛菜为原料,采用氯化钠提取液提取诸葛菜叶蛋白,通过单因素条件:浸提温度、浸提时间、浸提液质量分数研究诸葛菜叶蛋白的提取率.再经过正交试验.[结果]诸葛菜叶蛋白最佳的提取工艺条件为:料液比为1∶ 5,浸提温度为40 ℃,浸提时间为10 min,浸提液质量分数为15%.[结论]为进一步开发利用诸葛菜这一丰富的野生植物资源提供科学依据.

[Objective] The research aimed to study the protein extraction technology from Iolet orychopragmus.[Method] Choosing fresh Iolet orychopragmus as raw materials, the sodium chloride was used to extract the protein from leaves of Iolet orychopragmus through single factor conditions, including extracting temperature, extracting time, concentration of extraction liquid.Then the orthogonal experiment was made.[Result] The best protein extraction technology of Iolet orychopragmus was as follow: the feed ratio was 1∶ 5, the extracting temperature was 40 ℃, the extracting time was 10 min, the concentration of extraction liquid was 15%.[Conclusion] The study can provide the scientific basis for deeply developing and utilizing the wild plants resources Iolet orychopragmus.
