目的：预期掌握目前部分大理产奶制品中蛋白质含量以及非蛋白质氮的含量情况,并与外包装指示含量进行比较与奶制品是否一致。方法：粗蛋白测定法,根据微量凯氏定氮法的原理,测定奶制品中总凝固沉淀物重量,及奶制品中非沉淀物经三氯乙酸处理后取沉淀再采用沉淀重量法测定蛋白质含量并与国家规定标准（简称＂国标＂）进行比较。结果：将调味牛奶、酸牛奶、纯牛奶、奶粉中总含氮物质与真蛋白质的含量进行比较,差异没有统计学意义,蛋白质含量与外包装上标注的蛋白质含量接近一致,蛋白质含量均达到国标以上。结论：目前部分大理产调味牛奶、酸牛奶、纯牛奶、奶粉中不含有非食用氮物质,蛋白质含量与外包装上标注的蛋白质含量接近一致,所测量的部分大理产奶制品的蛋白质含量符合国家奶制品蛋白质含量标准。
목적：예기장악목전부분대리산내제품중단백질함량이급비단백질담적함량정황,병여외포장지시함량진행비교여내제품시부일치。방법：조단백측정법,근거미량개씨정담법적원리,측정내제품중총응고침정물중량,급내제품중비침정물경삼록을산처리후취침정재채용침정중량법측정단백질함량병여국가규정표준（간칭＂국표＂）진행비교。결과：장조미우내、산우내、순우내、내분중총함담물질여진단백질적함량진행비교,차이몰유통계학의의,단백질함량여외포장상표주적단백질함량접근일치,단백질함량균체도국표이상。결론：목전부분대리산조미우내、산우내、순우내、내분중불함유비식용담물질,단백질함량여외포장상표주적단백질함량접근일치,소측량적부분대리산내제품적단백질함량부합국가내제품단백질함량표준。
Objective：Master and non protein nitrogen content the expected part of Dali milk protein content of products,and packaging instructions compare the content of dairy products and consistency.Methods：According to the micro Kjeldahl determination principle,crude protein determination method,in dairy products and total coagulation precipitate weight,and milk products of sediment by trichloroacetic acid treatment and precipitation with precipitat-ed gravimetric method for the determination of protein content and with the national standard（referred to as＂ GB＂） were compared.Results：Protein content and packaging on annotation of protein content in close conformity,protein content reached GB or more,the flavoured mi-lk,sour milk,pure milk,milk powder of total nitrogen and protein content were compared,t-he difference was not statistically significant.Conclusion：The measured part of Dali milk p-roducts of protein content in line with national dairy protein content standard,some Dali fl-avoured milk,sour milk,pure milk,milk powder containing no consumption of nitrogen,pro-tein content and packaging on annotation of protein content in close agreement.
